Anti-inflammatory Chicken Soup

GLUTEN FREE | DAIRY FREE | SOY FREE 

When I first started cooking for myself, I was scared of making soups! I learned quickly soups are some of the easiest and most healing recipes we can make for ourselves. This take on a classic chicken soup has so many beneficial nutrients for the gut and immune system.


THE RECIPE

Ingredients

Chopped carrots (3-4)

Chopped celery stalks (3-4)

Chopped yellow onion (½ - whole depending on your onion preference. Or omit if sensitive)

2-3 tablespoons of ghee, grass fed butter or olive oil

1 tsp sea salt

1/2 tsp ground black pepper

1 tsp dried thyme

1 tsp dried rosemary

1 tsp dried oregano

1 tsp grated fresh ginger

1 bay leaf

8 cups of organic bone broth (I use Pacific Foods organic)

1-2 cups of shredded chicken (I used an organic rotisserie chicken)


Method:

Heat a large pot on medium low heat.

Add ghee and let it melt.

Add your chopped vegetables.

Stir until coated.

Add your herbs, salt and pepper.

Mix thoroughly.

Add your bone broth.

Add chicken, ginger and bay leaf.

Let simmer for 25-35 min.

Serve with bread or crackers
