Chocolate Chip Pecan Collagen Cookies

Makes 8-10

Ingredients:

1 cup almond flour

¼ cup brown rice flour

½ cup coconut sugar

½ tsp baking powder

2 scoops collagen (I used @gainful )

⅓ cup olive oil

2 eggs

1 tsp vanilla extract

¼ cup chocolate baking chips

¼ cup chopped pecans

Method:

Preheat oven to 375. Prepare baking sheet with parchment paper or grease with olive oil

In a large bowl, mix dry ingredients (except chocolate chips and pecans) together thoroughly. Add wet ingredients and mix until batter forms. Add chocolate chips and pecans.

Scoop into 1-2 inch balls and place on baking sheet. Bake for 12-15 minutes until golden brown on the edges.
