Creamy Pesto Pasta

Creamy Pesto Pasta⠀(3-4 servings)⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

For the pesto:⠀⠀⠀⠀⠀⠀⠀⠀⠀

1 cup walnuts (or sunflower seeds)⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 cups fresh basil ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Juice of half a lemon⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 tablespoons of nutritional yeast⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 cup water⠀⠀⠀⠀⠀⠀⠀⠀⠀

2-3 tablespoons of olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

1 tsp sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 tsp black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀

chopped garlic (omit for low fodmap)⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Method:⠀⠀⠀⠀⠀⠀⠀⠀⠀

  1. In a blender or food processor add all ingredients. Mix until smooth and creamy. You might need to add more water! Also, add more lemon if you'd like! I love mine super lemony. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

  2. Mix your pesto onto your pasta of choice (I used chickpea pasta). Add any extra vegetables you'd like. (I added zucchini and peas). Garnish with basil!

Meal prep tip: Double or even triple the pesto recipe so that you can have this dinner more than once! Add water in slowly when doubling or tripling the recipe for desired consistency.
