Fall Harvest Salad with Maple Tahini Dressing
A simple and seasonal salad that is perfect for meal prep!
What you need:
Curly kale (massaged with olive oil, lemon juice and sea salt) - don’t skip this step!
Rainbow carrots (raw or roasted)
Roasted delicata squash (sub sweet potato)
Chopped apple
Pumpkin seeds
Protein - I used tofu (sub chicken or chickpeas)
optional: Feta or goat cheese
For the dressing (aka the best part)
2-3 tablespoons of tahini
1 tablespoon of dijon mustard
a dash of maple syrup
hot water - add a teaspoon at a time until you reach your desired consistency.
Mix together until smooth.
