Fall Veggie + Sausage Sheet Pan Dinner

Sheet pan dinners are the absolute best! The only prep that going into this recipe is chopping some vegetables. Then put it in the oven for 30 minutes. And you have dinner!

This is perfect for 2 people with leftovers for lunch the next day. Double the recipe for a bigger family or more leftovers!

What you need:

1 packages of organic chicken sausage (I used mild Italian)

1 delicata squash

1 sweet potato

1 apple

3 cups of brussel sprouts (or 1 bag)

Seasoning spices: sage, thyme, rosemary

olive oil

salt + pepper

Method:

Preheat oven to 375 degrees. Place parchment paper on a large baking sheet.

Chop your vegetables and apples. Place on the parchment paper. Drizzle with olive oil. Add a few shakes of thyme, sage and rosemary. Sprinkle salt and pepper on top. Mix vegetables around until evenly coated in oil and seasoning.

Slice your sausage into bite size pieces. Add to the baking sheet. Put in the oven for 15 minutes. After 15 minutes, mix and flip everything. Roast for another 15 minutes.

Place and enjoy!
