Herby Chickpea Salad in Romaine Boats

In a blender or food processor, add in: ⠀

- 1 can of chickpeas, drained and rinsed. Dry off chickpeas before adding to blender⠀

- 1 tablespoon of fresh thyme. Or 1 teaspoon of dried thyme ⠀

- 1 tablespoons of dijon mustards

- 1/2 cup of chopped celery ⠀

- 1/4 cup of vegan mayo (I prefer @primalkitchen) ⠀

- salt and pepper to taste ⠀

Method:

Lightly blend together. I only blended for a few seconds because I did not want it completely smooth. You want to keep some texture! You want to keep the celery crunchy! ⠀

Spoon chickpea salad into romaine boats (washed and dried romaine leaves).

Add on your favorite vegetables! I added cherry tomatoes, cucumbers, sliced beets, and dressed microgreens. ⠀

Meal prep tip: Make your chickpea salad ahead of time. And maybe double or triple the recipe!
