Green Goddess Bowl

For the dressing:

In a high speed blender or food processor add:

- 1 garlic clove

- juice of 1 lemon

- roughly 2 cups of fresh mixed herbs with stems cut off (cilantro, dill, mint and parsley)

- 1 cup plain Greek yogurt or plain coconut yogurt

- sea salt to taste

Blend together. Add a dash of filtered water for a lighter consistency if needed

For the bowl,

Add chopped little gem greens, diced cucumber, avocado, crispy chickpeas or protein of choice, and hempseeds. Top with the green goddess dressing

For crispy chickpeas:

  • Open a can of organic chickpeas. Rinse and pat dry. Remove any lose skins (if you have the patience)

  • Heat a avocado oil in a skillet over medium heat

  • Add chickpeas. Sprinkle sea salt, pepper and any other desired seasonings. I like paprika and garlic powder

  • Move the chickpea around occasionally. 

  • Continue to saute until crispy!
