Quick + Easy Quinoa Salad

This is a great recipe to meal prep for the week! OR meal prep the quinoa and chicken. Then you have lots of options throughout the week.

Easy Quinoa Salad
quinoa
Shredded chicken
Chopped vegetables - use what you have on hand! (I used carrots, tomatoes, and radishes)
Diced avocado
Arugula
Sprinkle of salt + pepper
Dressing of choice

My go to dressing is
1-2 tablespoons of olive oil
1-2 teaspoons of Dijon mustard
A dash of apple cider vinegar
A dash of honey (I used garlic infused honey this time 😋)
Salt and pepper

Mix everything together in a bowl and enjoy!
