Soy Free Chicken Stir Fry

For the stir fry

You need

1 lb of organic chicken (or preferred protein)

frozen broccoli

Frozen cauliflower

Snap peas

Baby bell mushrooms

baby bokchoy

Sesame oil

Coconut aminos

Fresh finely chopped ginger

Salt + pepper

Crushed red pepper

Method:

1. Rinse and pat dry the chicken. Cut into 1-2 inch cubes

2. Bring a large frying pan to medium heat with a little bit of sesame oil. Cook chicken until cooked through and lightly browned on the outside

3. While chicken is cooking, steam your broccoli and cauliflower

4. For the stir fry sauce, in a small bowl combine 2 tablespoons of sesame oil, 1/4 cup of coconut aminos, 1 tablespoon of chopped ginger, salt and pepper to taste. Whisk together

5. Once chicken is done, bring heat down to medium low. Add stir fry sauce, steamed vegetables, mushrooms, snap peas and greens. Mix together thoroughly. Until mushrooms, snap peas and greens are cooked.

6. In a bowl add brown rice and stir fry. Top with crushed red pepper and sesame seeds.
