Savory Sweet Potato Toasts

Ingredients:

  • 1 sweet potato (sliced thin, long way)

  • Scrambled eggs

  • Hummus or your favorite spread

  • Handful of mushrooms

  • Olive oil (and or grass-fed butter)

  • Thyme + rosemary

  • Greens (I used pea shoots)

  • Salt + Pepper

Method:

  1. Roast your thinly sliced sweet potatoes in the oven at 375 for 15-20 minutes until brown and crispy

  2. Slice mushrooms. Saute in a pan in grass-fed butter, rosemary, and thyme until soft.

  3. Scramble your eggs

  4. Assemble your toasts: add hummus, eggs, mushrooms and greens. Sprinkle with salt + pep. I like to dress my greens in a little bit of olive oil and lemon juice before I put them on.

Meal prep tip: Make your sweet potato toasts ahead of time. Then day of throw them on a skillet to heat them up.
