Sweet potato protein waffles or pancakes

Meal prep tip: make a bunch of these and freeze them. Defrost and crisp in a skillet on week day mornings

Ingredients

In a large bowl add:

1 cup steamed and cubed sweet potato

1 egg

1 cup coconut milk

2 tablespoons of maple syrup

1 cup almond flour

1 tablespoon coconut flour

1 tsp baking powder

1/2 tsp baking soda

1 scoop plain or vanilla protein powder (or collagen)

1 tsp vanilla extract

About 2 tsp of cinnamon

1 tablespoon of orange zest

1. Add sweet potato to a large bowl and mash with a fork.

2. Add rest of the ingredients and mix together

3. Heat up your waffle maker and spray with avocado oil. If you are making pancakes, heat up your skillet, spray with avocado oil.

4. Make waffles based on your waffle maker settings or make pancakes

5. Top with more orange zest pomegranate seeds and maple syrup
