Greek Orzo Salad

Ingredients

- cooked orzo (or gf pasta)

- half an English cucumber, chopped

- handful of baby tomatoes, chopped

- organic sheep’s milk feta cheese (I like @olympianagreek because it’s grass fed) (vegan feta or omit)

- juice of 1 lemon

- chopped dill to taste

- extra virgin olive oil

- salt + pepper to taste

Method

  1. Bring a pot of water to boil. Cook orzo (about 3/4 cup) as instructed (about 7 minutes)

  2. While orzo cooks, chop your vegetables, dill and feta.

  3. Drain pasta well.

  4. In a large bowl, add orzo, vegetables, dill, 2 tablespoons of olive oil, lemon juice, salt + pepper to taste.

  5. Enjoy!
