White Bean Turkey Chili
GLUTEN FREE | DAIRY FREE | PROTEIN PACKED | MEAL PREP
If you’re looking for a protein packed, gut healing recipe that is simple to make and perfect for meal prep, this is it! There is minimal chopping required and all you have to do is throw a few ingredients into a pot and let it simmer for 30 minutes.
As the weather gets cooler, you might notice your cravings are shifting. In the summer you probably were reaching for cooling, raw foods like cold salads, smoothies and fruit. Now, you might want warm, cooked foods, especially those cozy comfort foods. This chili checks off all the boxes:
warm and nourishing
cozy and comforting
packed with protein and fiber
gut healing and hormone balancing
WHITE BEAN TURKEY CHILI
Ingredients
1 medium onion (or half a large onion)
1 yellow bell pepper
1 lb of organic ground turkey
28 oz of diced tomatoes (1 28 oz can or 2 14 oz can)
2 cans of cannellini beans
2 oz of green chilis
3 cups of bone broth
2 tablespoons of chili powder
1 tsp of paprika
1 tsp of cumin
1/8 tsp of cinnamon
1 tsp sea salt (or more to taste!)
High heat cooking oil like ghee or grass fed butter
Method:
Dice your onion and pepper. I use this chopping tool! It saves so much time!
Bring your pot to medium heat and add about 2 tablespoons of high heat cooking oil. Add onion and pepper. Saute until onion is fragrant.
Add turkey and break it up finely.
Add spices and coat turkey, onion and peppers thoroughly.
Strain and rinse beans in a strainer. Mash some of the beans with a fork, about 1/3.
Add tomatoes, beans, chilis, and bone broth to pot and mix.
Bring chili to a boil and then lower heat to a simmer.
Cover and let simmer for 30 min. Allow liquid to evaporate a bit for a thicker chili.
