Abby’s Go-To Simple Salad
GLUTEN FREE | VEGETARIAN | DAIRY FREE OPTIONAL
my go-to salad because I ALWAYS have these ingredients on hand. This salad takes about 15 minutes to make!
THE RECIPE
gluten free grains of choice
fresh leafy greens
shaved carrots
chopped cucumber
Grass fed organic feta
crispy chickpeas (I use the Jovial Foods chickpeas in glass jars)
tahini dressing
For the chickpeas
Rinse + dry canned chickpeas
Coat in olive oil, sea salt and seasoning (I love the New PRimal Citrus Herb seasoning)
Sauté chickpeas until crispy on a skillet over medium heat
For the dressing
Add tahini, lime juice and a splash of hot water. Whisk together
Add more water or tahini for desired consistency.
