Chia Pudding Papaya Boats

Ingredients

  • 3 tablespoons of chia seeds

  • 1 scoop of high quality protein powder or collagen (I use Gainful)

  • 1/2 cup of plant based milk

  • 1/4 cup plain greek yogurt (or plant based yogurt)

  • 1-2 papayas (Trader joes usually has them!)

  • Extra toppings! (Ideas: fresh fruit, hemp seeds, granola, bee pollen, honey)

Method:

In a large bowl or glass container add chi seeds, protein and plant based milk. Mix together thoroughly and place in fridge overnight

In the morning, slice a papaya in half (or quarters). Scoop out the seeds

Place a serving of chia pudding in the papaya

Add toppings
