Ginger Soba Noodles

For the ginger sauce

Ingredients:

1/3 cup coconut aminos

1 tablespoon almond butter, peanut butter or sunbutter

½ - 1 tablespoon of  grated fresh ginger

2-3 tablespoons of sesame oil

To make it spicy add sriracha to taste

Method

Add everything into a measuring up or small bowl and whisk together

Separation make occur. Always whisk before pouring on to veggies or noodles.

For the noodle bowl

Ingredients

Soba noodles

Peanut ginger sauce

Vegetables of choice - I love added bok Choy, zucchini, carrots, and snap peas

1 tablespoon of sesame oil

1 teaspoon chopped garlic

1 drop or ginger essential oil or 1 teaspoon of grated ginger

scrambled or friend egg

Sesame seeds to garnish

Method

1. Make Soba noodles as directed. Make sure to run under cool water when you strain them!

2. Sauté garlic in sesame oil on a frying pan until fragrant.

3. Add ginger and saute another minute

4. Throw in your vegetables, except bok choy (I add the bok choy at the very end so it doesn’t get over cooked)

5. When the vegetables are almost done cooking, add in bok choy and half of your ginger sauce. Sautee for a few extra minutes.

6. Put your soba noodles back in the pot, pour the rest of the ginger sauce onto noodles. Mix it in evenly!

7. Prepare a bowl of noodles, add vegetables, add a friend or scrambled egg and top with sesame seeds. Enjoy!
