Peanut Butter Protein Granola Bowl

For the bowl:

Add plain greek yogurt or unsweetened coconut yogurt into a bowl

Top with protein granola and fresh fruit

Meal prep tip: make the granola head of time and keep in the fridge. Make these into parfaits in glass jars for no prepping the morning of. Layer yogurt, granola and fruit. Keep in fridge.

For the granola:

Ingredients

1 cup mixed nuts (i used chopped almonds and Brazil nuts)

½ cup of peanuts

1 cup of rolled oats

1 Gainful Chocolate Protein flavor boost (or 1 tablespoon of cacao)

1 scoop of protein powder (I use my personalized Gainful protein

1 scoop of Gainful fiber (or 1 tablespoon of flaxmeal)

3 tablespoons of maple syrup

⅓ cup of creamy peanut butter

Pinch of sea salt

Method

Preheat oven to 325 degrees

Prepare a baking sheet with parchment paper

In a large bowl, add all the dry ingredients and mix together until nuts and oats are evenly coated

Add maple syrup and peanut butter. Try warming up the peanut butter if it’s too thick

Mix together until evenly coated

Spread out granola on top of the parchment paper

Bake for 10 minutes
