Lemon Blueberry Chia Pudding


2 of my favorite things… blueberries and lemons

I used @elmhurst1925 oat milk to get the super creamy texture and added Greek yogurt for extra protein. I love chia pudding as a snack or quick breakfast.

What you need:
3 tablespoons of chia seeds
1/2 cup of @elmhurst1925 oat milk
2 tablespoons of Greek yogurt (or plant based yogurt)
Juice of half a lemon + lemon zest
1/4 cup of blueberries

Optional: Add a scoop of protein powder or collagen! If you do this add more oat milk!

Mix everything together in a bowl or glass. Cover and place in the fridge overnight. (Makes 1)
