Nut Free Chocolate Granola Bars

Ingredients:

-1 cup raw pumpkin seeds

-1 1/2 cup of gluten free oats

-1/2 cup raw sunflower seeds

-1/3 cup raw flax seeds

-1/3 cup shredded coconut

-1 cup of pitted dates

-1/4 cup of maple syrup

-1/3 cup sunflower butter

-pinch of sea salt

Method:

1.Place seeds, oats and coconut on a baking sheet lined with parchment paper. Roast at 350 degrees for about 10 minutes. Or until toasted. (Coconut shreds will toast much faster than the seeds)

2.In a food processor or blender, blend dates until a thick paste forms. Place in a large mixing bowl

3.Add sunflower butter and maple syrup in a small sauce pan. Heat on low and mix until the ingredients are combined well. Remove from the heat and set aside

4.When your seeds are done roasting, add everything into the mixing bowl with dates. Add maple syrup and sunflower butter mixture into the bowl. (It should still be warm)

5.Mix everything up like crazy! It’s easiest to do with your hands.

6.Line an 8 x 8 baking dish with parchment paper. Press granola bar mixture into baking dish firmly. The more firmly you press the granola into the dish, the better the bars stay together.

7.Refrigerate for 30 minutes to an hour

8.Once your bars are cooled, cut them into 1-2 inch wide bars

9. Melt your favorite healthy chocolate chips in a sauce pan. I use @hukitchen chocolate gems.

10. Drizzle chocolate on top of your bars and refrigerate.
