Simple Herb Roasted Whole Chicken
Ingredients
1 organic whole chicken (we @butcher_box )
1 medium onion
3-4 medium red potatoes
3-4 medium whole carrots
Half a stick of room temp butter
Fresh herbs (I used thyme and sage)
Garlic
Lemon
Salt
Pepper
Olive oil
Method:
Preheat your oven to 425 degrees.
Chop your vegetables. Put them in a large bowl. Lightly coat with olive oil, salt and pepper.
Chop your herbs (about a tablespoons of each). Add to your room temp butter. Mince 1-2 garlic cloves and 1/4 of juice from a lemon. Mix together thoroughly.
For your chicken, make sure gizzards are removed (from inside cavity). Generously salt and pepper the outside of the chicken. Stuff with lemon (cut into quarters) and some of the chopped vegetables.
Rub the butter all over the outside of the skin. Then make sure to put butter under the skin as well (dont rip the skin).
Place the chicken in your @ourplace Always Pot or dutch oven. Put pot in the oven covered. Roast for 20 minutes PER POUND.
This was a 3.5 lbs chicken. So I roasted for 1 hr 20 min. For the last 30 min, I removed the lid to allow it to crisp more. Enjoy!
