Single Serve Strawberry Peach Crisp

Makes 1-2 servings

What you need:

3-4 strawberries

1 peach

Juice from 1/4 of a lemon

2 tsp of coconut sugar

1 tsp of arrowroot powder (optional - it makes the filling thicker but not 100% necessary)

1/4 cup gf rolled oats

1 tsp cinnamon

1 tablespoon almond flour

1 healed tablespoon of room temperature coconut oil (solid and soft, not melted)

Method

Preheat oven to 350 degrees

Slice strawberries and peaches. Place in a bowl. Add lemon juice, arrowroot powder and 1 tsp of coconut sugar. Mix thoroughly

In a separate bowl, place oats, cinnamon, almond flour and 1 tsp coconut sugar. Mix together thoroughly.

Lastly, add the coconut oil. Using a fork smash the coconut oil into the oat mixture. Coating all the oats. Some clumps are okay.

In oven safe, glass dishes or Pyrex bowls add peach and strawberry mixture. Add the oat mixture on top. Bake for 20 minutes.

Enjoy warm or with ice cream
