Mango Lime Chia Pudding Parfaits

Chia pudding is one of my favorite foods to meal prep. I like to prep a few jars on Sunday or Monday so that I have a quick breakfast or snack that I can grab. Chia pudding is so versatile. So many different flavor combinations and ways to make it!

You’ll love this summer-y flavor combination of chia pudding that mixes juicy ripe mango and fresh lime juice. It’s so flavorful! I always had a scoop or two of protein powder or collagen for added protein.

INGREDIENT SPOTLIGHT

Chia seeds - rich in omega3 fatty acids which have anti inflammatory properties. Chia seeds are also a great source of soluble fiber which promotes healthy digestion, regularity and can help with blood sugar balance

Mango - great source of insoluble and soluble fiber which can help with bloating and constipation. They are contain immunity boosting vitamins as well as antioxidants

MANGO CHIA PUDDING PARFAITS

INGREDIENTS

2 cups of milk of choice (I used my no strain creamy cashew milk)

2 scoops of clean ingredient protein powder (I use Truvani)

1 large red mango (or 2 yellow mangos)

1 lime

1/2 cup of chia seeds

Optional: a dash of honey.

METHOD

In a high speed blender add: milk of choice, half of a sliced mango, juice of half a lime, protein powder and honey if using. Blend until smooth! Essentially you are making a mango milk.

Pour the milk into a bowl. Add chia seeds and whisk together. Let the chia pudding sit a few minutes to thicken up a bit. If its too thick, you can add a dash or 2 more of milk.

Slice up the remaining half of your mango into cubes. Choose containers or jars that have airtight lids. Scoop chia pudding into containers. Once its about half way full, add a layer of mango cubes. Then add another layer of chia pudding. Top it with more mango, lime zest and a lime slice to garnish. Squeeze the lime on top before you eat it!
